This fruity expression, made with premium oloroso and Moscatel sherry casks, has a good sherried flavor balance with some honey and spicy vanilla.
It smells like grapes, dried fruit, and toffee, and tastes like more pastry, raisins, and nuts. Sherry cask finishing has taken on a life of its own in recent years. The Glenallachie Distillery is one of the most famous in the Speyside region. It was close for a while before being reopen in 2017 by Billy Walker, George Christie, and Trisha Savage. This sherry cask mature expression demonstrates what may happen when whiskies are store for an extended period of time in a good barrel: it becomes rich and extremely delicious.

GlenAllachie 15-year-old single malt expression. This has been stored in Pedro Ximenez and oloroso sherry casks, resulting in an elegantly smooth, rich dram with scents of raisins, butterscotch, and sweet spices.
Since Billy Walker and his crew took over the distillery two years ago, they have added a new dram to their remarkable core selection of malts. Sweet, juicy, toffee, and berries on the nose. Rich sherry sweetness and chocolate on the palate, with fall fruits and a hint of honey. Finish: A lovely citrus finish with a hint of spiciness.
Billy Walker, dubbed the “Jewel in the Crown,” created this new expression from a blend of Pedro Ximénez and Oloroso sherry puncheons. Official tasting notes describe the tongue as ‘raisins and butterscotch develops to banana, orange peel, and dark chocolate – sounds delicious!
